Do foods like fried kudzu weed kimchi, Asian carp ribs, or lionfish sashimi sound appealing at all? If so, you’ll probably want to check out Prey, an upcoming pop-up restaurant located at South Beach’s 1 Hotel & Homes rooftop. The restaurant by chef Bun Lai is expected to open on February 24th until March 24th.
Bun Lai has already earned his place in history. As the chef and owner of the Miya’s restaurant in New Haven, Connecticut, Lai is responsible for opening the world’s first sustainable sushi restaurant. Prey represents Lai’s first stab at presenting Miami Beach residents his unique brand of environmentally conscious eating. The Prey menu is comprised of species that are considered invasive and disruptive towards the environment. Perhaps most intriguingly, the ingredients Lai will be using will be hunted, fished, and foraged for by Bun Lai himself.
Prey will be open for dinner from 6 pm to 11 pm Wednesday through Saturday. There will also be late night sushi and a lounge service open from 11 pm to 2 am. On Sunday and Tuesday dinner will be served from 6 pm to 10 pm while the lounge services will be open from 11 pm to 12. The restaurant will be closed for dinner on Mondays but will offer its lounge service from 6 pm to 2 am.
